In DreamWorks Pictures The Hundred-Foot Journey, just one bite of a meal could transport the characters home to found memories and love. Many scents and flavors take me home, especially to my Grandma’s kitchen where we spent many weekends and holidays as a family. One of my favorite meals that she made for us was her Hulupki’s (stuffed cabbage). She loved to share with us food from her Slovak heritage. Stuffed cabbage with mashed potatoes will always remind me of my Gram and the love that she put into them.
In honor of the beautiful film, we were treated to a tour of Le Cordon Bleu College of Culinary Arts in Los Angeles. After the tour, they taught us how to make a Parisian Mumbai Salad combining the French and Indian flavors featured in the film.
Before we made our dinner, Le Cordon Bleu treated us to an amazing appetizer of Quiche Lorraine and Beef Bourguignon with a salad. Both were amazing, but the crust on the quiche blew me away. I will be sharing both recipes soon, so stay tuned!
Soon we got busy in the kitchen. With the help of Le Cordon Bleu students, Karen (Rockinmama) and I made our dish.
The salad was amazing, so fresh and full of flavors. I will definitely be making this at home for my family. Here is the recipe so you can give it a try for yourself and to get a taste of the flavors in The Hundred-Foot Journey.
Parisian Mumbai Salad Recipe
- Chicken Marinade
- 1 c plain yogurt
- 1 t. ginger freshly grated
- 1 t. garlic minced
- 1 t. ground cardamon
- 1 T curry powder
- 2 6 oz skinless, boneless chicken breast cut into ⅓ strips
- 2 t. salt
- 2 t. pepper to taste
- 4 oz mixed greens
- 1 mango julienned
- 1 apple w/ skin julienned
- 2 T salad oil
- 1 t red wind vinegar
- ¼ t Dijon mustard
- salt and pepper to taste
- Naan Bread
- 1 pc Naan bread cut into cubes (pita bread)
- ½ oz salad oil
- salt and pepper to taste
- Curried Walnuts
- 1 oz grape seed oil
- 2 t. granulated sugar
- ½ t curry powder
- 2 oz walnuts
- In a plastic bag, combine the yogurt, ginger, garlic, cardamom, curry powder, salt and pepper.
- Add the sliced chicken pieces and marinate for 45 min., set aside.
- Julienne mango and apple, set aside.
- Proceed making the vinaigrette, in a bowl mix Dijon mustard and red wine vinegar together, add salt and pepper.
- Slowly incorporate the salad oil while continuously whisking. Set aside.
- Take the bread then cut it into ¾ in cubes or bite size pieces then drizzle with salad oil then season with salt and pepper.
- Baki it in the oven at 375 for 8-10 min until golden brown.
- Get the chicken then grill it until the meat is white and not translucent.
- Assemble everything onto two plates then serve.
