Sweet Swap Coconut Banana Pudding Recipe

Spring is here, that means its time to shed those sweaters for cute sundresses. I am also hoping to shed some pounds too by getting fit and eating healthier. An easy way to cut those calories is to swap out ingredients for lighter options. I still have a sweet tooth so I decided to recreate a family favorite recipe and swap out the added sugar for SPLENDA® Sweetener. Here is our Lightened Coconut Banana Pudding Recipe!

Sweet Swap Coconut Banana Pudding Recipe

Ingredients
  • ¼ c Splenda
  • ⅓ cup cornstarch
  • 3 cups coconut milk
  • 3 T margarine
  • 1 tsp vanilla extract
  • box of vanilla wafers
  • 4 ripe bananas, sliced
Instructions
  1. Wisk together Splenda, salt and cornstarch in a saucepan. Slowly whisk in milk and bring to a boil whisking constantly. Simmer and whisk until it thickens. Remove from heat and add vanilla and margarine. Cool.
  2. Keep layering vanilla wafers, pudding, and bananas to fill sundae cups. Chill overnight.
  3. Add crumbled vanilla wafers and put a cherry on top.
  4. Enjoy!
